Instructions
1. Mix flours, yeast, and salt. Add water and oil to form dough. Knead 10 mins. Let rise 2 hrs. 2. Sauté onion and garlic in oil. Add tomatoes, vinegar, red pepper, sugar, salt, and pepper. Simmer 15 mins. Blend to smoothness. 3. Preheat oven to 500-550°F (260-290°C). Oil a 9x13-inch pan, stretch dough into it. Rest 15 mins. 4. Spread brick cheese over dough, add mozzarella and toppings. 5. Add sauce in stripes, bake 12-15 mins on lowest oven rack until cheese bubbles and crust is crispy. 6. Reheat remaining sauce. Top cooked pizza with sauce, basil, and a Parmigiano-Reggiano grating before serving.View original recipe
