Penne Vodka with Chicken and Bacon

What you need

Instructions
Cook the Bacon: Cook bacon in a large skillet over medium heat until crispy. Drain on paper towels, leaving 1 tbsp bacon fat in the skillet. Cook the Chicken: Season chicken with salt and pepper. Add 1 tbsp olive oil to the skillet and cook chicken until browned and cooked through about 5-7 minutes. Set aside. Prepare the Vodka Sauce: In the same skillet, add 2 tbsp olive oil. Sauté onion until translucent, about 5 minutes. Add garlic and red pepper flakes; cook 1-2 minutes until fragrant. Pour in vodka and simmer for 5 minutes, reducing slightly. Stir in crushed tomatoes and simmer for 10-15 minutes, stirring occasionally. Reduce heat to low, stir in heavy cream, and cook for 5 minutes until creamy. Stir in Parmesan cheese and season with salt and black pepper. Cook the Pasta: While the sauce simmers, cook penne in salted boiling water according to package instructions until al dente. Combine and Finish: Add cooked chicken and bacon to the vodka sauce. Stir in cooked pasta, tossing to coat. Stir in chopped fresh basil. Serve: Serve hot, garnished with fresh basil leaves and grated Parmesan cheese.View original recipe
